In 2024, the United States (U.S.) potato fresh market represented a $1.10 billion industry, 23% of the potatoes produced in the U.S. Fresh potatoes are also important for U.S. exports. In 2022, U.S. potato exports reached a record $2.1 billion in sales. Canada (37.5%), Mexico (26.6%), Japan (8.7%) and Taiwan (5.7%) were the top export markets for U.S. fresh potatoes.
This integral industry faces significant challenges both internally and externally. Within the U.S., despite potatoes being the most consumed vegetable in the country, consumption of fresh potatoes has been in decline, falling by about 20% during the 1970s, and trending lower again since 2000. On the other hand, there is a growing consumer interest in processing potatoes, which represents 88.3% of potato utilization.
Externally, U.S. exports have been affected by phytosanitary problems and protective regulations, which reduce accessibility to markets abroad. In addition to other challenges, such as variety selection, sprout control, mechanical injuries and defects, these diseases add more obstacles to the fresh market.
Recognizing the importance of the fresh potato market for the U.S., and especially for Idaho, the University of Idaho is committed to organizing the first “Fresh Pack Potato Symposium” in Twin Falls to address the most recent challenges of this market segment. The goal of this symposium is to contribute to the advancement of knowledge and technology in this important potato industry in Idaho and the U.S.

Abstract submission
Thank you for your interest in presenting at the 1st Fresh Pack Potato Symposium in Twin Falls. Abstract submission deadline is Saturday, Aug. 1.
Submission process
All abstracts are limited to 300 words and must include the following components:
- Clear context and significance of the research for the "fresh pack sector"
- Hypothesis or objectives
- Methods
- Results
Note: Abstracts addressing commercial products or services must maintain a scientific focus. Submissions with promotional intent will not be accepted.
Do not include the abstract title, authors, keywords or references within the abstract text. Please carefully edit and proofread your submission prior to submission. Ensure that all author names and affiliations are correctly entered in the online form.
All abstracts will be presented as posters. Submission of an abstract implies acceptance of the assigned format. Poster presentations:
- Poster presentations must not exceed 42” × 42”. Any standard poster size is acceptable, provided it fits within the allocated space.
- The abstract title, author names and affiliations should be clearly displayed at the top of the poster.
- Use a clean, sans-serif font (e.g., Helvetica) for readability.
- Title lettering should be at least 1 inch (2.5 cm) tall. Author names and affiliations may be slightly smaller.
- Authors are encouraged to include a photograph to facilitate identification.
- Posters must be displayed starting Tuesday, Nov. 17, and remain on display throughout the day. Displayed on poster boards, presenting authors must be available during designated poster sessions.
All communications will be sent to the submitter until acceptance notifications are issued. After acceptance, all correspondence will be directed to the presenting author.
Final program decisions and notifications will be made by early October. The designated presenting author must be registered by Oct. 15. Failure to register by this deadline may result in withdrawal of the abstract.
