Impact statements

I have worked for University of Idaho Extension specializing in family and consumer sciences since September of 1999. Since my hire date, I have overseen Supplemental Nutrition Assistance Program Education, known as Eat Smart Idaho in the ten northern counties of Idaho. Within Eat Smart Idaho, I have oversight over a program coordinator (RD), and several community nutrition advisors. Additionally, I provide oversight to University of Idaho dietetic students who provide programming within Eat Smart Idaho during their Community Nutrition Supervised Practicum. ESI provides direct education to low income families in North Idaho. I lead our Northern District Eat Smart Idaho programming efforts with Policy, System and Environmental Change work and have a very active Smarter Lunchroom Program in three school districts as well as an equally active Healthy Food Pantry/Healthy Food Drive project. Outside of my Eat Smart Idaho role, I provide programming in wellness, obesity prevention, diabetes prevention, physical activity and food safety.

I am an active community partner and serve on several key coalitions in my community. I have overseen ~4.3 million dollars in grants to assist with my programming and have been PI on 64 of them. I have a 5% appointment within scholarly activities and activity present at national, regional and state conference to disseminate my work. Currently, I am involved in a Cost Efficiency and Benefit Analysis Study on Eat Smart Idaho, evaluation of our Food Pantry Project, Plate Waste Studies to establish Smarter Lunchroom impact, Cooking Matters Pilot curriculum in conjunction with my local health district, and a water bottle food safety project.
