Family and consumer sciences programs work to improve the quality of life of adults, children and families — specifically through healthy lifestyles, nutrition, food safety and financial management. Preserve at home
Preserve@Home is a six-week online class for individuals who want to can and preserve foods for their families. No prior knowledge is required. Cost: $35 per person. Contact the UI Extension, Minidoka County office at minidoka@uidaho.edu or 208-436-7184 for more information.
Food safety advisor program
UI Extension offers research-based education on how to safely preserve a variety of food products. After completing the course, Master Food Safety Advisors volunteer their service to provide information to others in their community.
Classes are taught by Extension educators and Advanced Master Food Safety Advisors. Each session includes demonstrations, lectures and a hands-on lab where participants make a variety of preserved foods.
Topics include:
- Food safety
- Canning acid foods (fruits, tomatoes)
- Canning low acid foods (meats, vegetables)
- Making jams, jellies and preserves
- Pickling
- Dehydration and smoking
- Food storage including emergency preparedness
- Freezing
Eat Smart Idaho
Eat Smart Idaho is Idaho’s nutrition education program to help adults and families learn how to stretch their food dollars to provide tasty, low-cost, healthy meals for their families.
Nutrition advisors teach group classes and one-on-one lessons to adults and children. The lessons cover basic nutrition, stretching the food dollar, food resource management, food safety and physical activity.
