Sweet Yam Soup

Yield: 6 portions
Cook time: 55 minutes
2 medium-sized yams
2/3 c Half and Half
1 large clove of garlic
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 c brown sugar (packed)
1 c 1% milk
Peel and cube yams. Place in glass bowl with small amount of water in bottom. Microwave yams 3 minutes or until soft. Place yams in food processor with Half and Half. Blend until nearly smooth consistency. Finely chop garlic. When yams are nearly smooth, add garlic, cinnamon and nutmeg. Blend again. Once mixed and smooth put yams and seasoning in pot. Add brown sugar and 3/4 – 1 cup of milk for desired consistency. Cook on medium-low heat for 30 minutes or until heated through.
