Hearty Vandal Pride Bread

Yield: 20 servings
Oven: 350⁰ F
Bake: 30 – 40 minutes
3/4 c lentils
1 1/2 c water
2 packages yeast
1 c warm water
1 1/2 c 2% milk
1/4 c oil
1/4 c sugar
1 tbsp salt
6-8 c bread flour
Bring lentils and water to a boil, simmer for 30 minutes, drain and cool. Mix yeast with warm water. In mixing bowl, mix 4 cups flour, salt and sugar. Slowly add lentils, milk, yeast mixture and oil. Fold together, adding more flour as needed until the dough forms a ball. Knead dough, adding flour when needed, for about 8 – 10 minutes or until elastic. Place dough in greased bowl, cover, let rise 1 hour or until doubled in size. Punch dough down and braid on a greased cookie sheet. Let rise for a second time 1/2 – 1 hour or until doubled in size. Bake for 30 – 40 minutes or until golden brown.
