Vandal Victory Pie

Victory PieThanksgiving is like game day – busy and hectic but exciting. On days like that you need something simple yet original to celebrate the occasion. In true Vandal spirit, we have brought our best foot forward and “vandalized” the classic rendition of a pecan pie. This culinary delight is sure to surprise you when you cut it open and find apples. There’s no compromise with these two family favorites combined in one deliciously easy dessert: the Vandal Victory Pie.

This pie is a rewarding combination of apple and pecan, drizzled with caramel. After being good all year round, Thanksgiving is a time to indulge and savor the flavors of the season; this pie will bring them all to you in one slice! The layers of this pie bring together festive fall apples, traditional pecan pie filling and a decadent ribbon of caramel. So stop hesitating over the dessert tray and choose the Vandal Victory Pie!

Oven: 375⁰ F
Bake: 40 minutes

for pie for caramel cream cheese topping (optional)
Premade 9” pie crust 4 oz cream cheese
2 eggs (slightly beaten) 2 tbsp brown sugar
2/3 c dark corn syrup 1/2 tsp vanilla
2/3 c sugar 1/4 c caramel ice cream topping
4 tsp butter (melted)
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1 tsp vanilla
1 1/2 c pecan halves
2-3 Granny Smith apples

Preheat oven. Wash and slice apples. Place pie crust in pie pan, set aside. Layer sliced apples in crust. Sprinkle pecan halves over apples. Mix eggs, corn syrup, sugar, butter, salt, cinnamon, nutmeg, cloves and vanilla in bowl. Pour mixture over pecans and apples. Bake for 40 minutes. Allow to cool before serving.

Whip together all ingredients. Chill until pie is served. Dollop on top.
