2012 Healthy Idaho

The 2012 series is titled "Healthy Idaho," and will kick off on Thursday, March 15th. Our topic this year aligns with the University’s participation in the state’s Healthy Eating, Active Living program and utilizes the University of Idaho’s dietetics program and Extension expertise. So bring a brownbag lunch and join us at the University of Idaho Boise!

All brown bag gatherings are free and open to the public, and attendees are encouraged to bring their own lunch. Because the space is limited, RSVPs are required at professionaldev@uidaho.edu or (208) 334-2999. Beverages and a healthy snack will be provided.

  • March 15, 2012: "Starving Cancer"
    Presented by SeAnne Safaii, Assistant Professor, College of Agricultural and Life Sciences, University of Idaho

    The National Cancer Institute research shows that as much as 50 percent of cancer risk may be related to diet. In this presentation, you will learn how to eat to prevent angiogenesis (the growth of blood vessels that feed the cancer cell) and how different dietary nutrients influence cancer . This class gives a general overview of what we know about diet and cancer to date.

Learn some sneaky strategies to shopping and preparing foods that make it possible to prepare healthful foods and support a sustainable lifestyle without spending a fortune at the checkout counter.     In 2010, Americans spent $2.6 billion dollars on 2600 gluten-free products. In this class you will learn if gluten-free items are healthier, who needs to buy these products, and conduct a taste-test.

    How do you get kids to eat more fruits and vegetables, especially when they may only want to eat chicken nuggets and French fries and you are not supposed to force kids to "clean their plate" or make meals a power struggle? This session will show you how to get them to gobble up these foods without breaking your budget.

  • October 18, 2012: "Vegetarianism"
    Presented by Dr. SeAnne Safaii, RD, LD, Assistant Professor, University of Idaho; and University of Idaho Dietetics Students

    Many people are avoiding meat these days, partly due to the high fat and fiber-free characteristics of meat compared to plant foods, but also, as meats are cooked, cancer-causing chemicals, called heterocyclic amines, tend to form within the meat tissue. In this session, you will learn about and taste a variety of vegetarian sources of protein, which are low in fat, high in fiber, and loaded with cancer-fighting nutrients. Tips to living healthy as a vegetarian will be offered.
